Easy (I Mean EASY!!!) Country Apple Bread

Greetings from Wild and Wonderful West Virginia!

I hope that you are all staying safe, healthy, and as happy as humanly possible in our current world. A wonderful thing about being stuck at home is I'm able to work on small projects around the house and cook more than my schedule typically allows.

My recipe for Country Apple Bread is below. I hope you love it as much as I do!

1  can apple pie filling (mashed)
1 yellow cake mix
4 eggs (lightly beaten)
1 cup self-rising flour
1 tbsp cinnamon
1 medium chopped apple

Whisk the dry ingredients together. Add the pie filling and eggs. Fold in the chopped apples. Stir the batter well and make sure the dry ingredients are mixed. The mixture is very thick. Divide the mixture evenly into two greased loaf pans. Sprinkle a few pinches of cinnamon and sugar on the top of each loaf. Bake on 325 degrees for 35-45 minutes depending on your oven. Let the loaves cool. Slice and enjoy with a scoop of vanilla ice cream!
