This recipe has saved me more times than I can count. It's always a crowd pleaser! There's just something about a Pineapple Upside Down Cake that speaks to all sorts of people. A dear friend of mine from college named Katie, has fond memories of her momma Kaye always having the ingredients on hand "just in case company stops by". I never met Ms. Kaye, but I feel like I know her. I think of her when I'm doing simple things around the house like laundry or craft projects. She was a super mom and a super woman who ran a house, took care of her husband, raised three girls, successfully taught and nurtured hundreds of elementary school children, cooked three meals a day and was everything to everyone. She reminds me of the Proverbs 31 woman... Something to strive for with no question.
Anytime I fix a Pineapple Upside Down Cake, I think of Ms. Kaye and the legacy she left behind. How wonderful was she to have left an impression on people that she never even met?
