Saturday Night Recipes

Hey Y'all!

I hope everyone is staying safe and warm in this horrible weather sweeping across the country. Prayers and thoughts to all of you who are battling the storms!

We have had horrible weather in Atlanta for the past week or two. Snow, ice, sleet the whole nine yards. Let me tell you, Southerners do not like snow, sleet and ice. We do well with sunny skies and the occassional light rain to make our gardens grow. I will have a post in a few weeks about how I plan my garden so be on the lookout for that. 

Because I'm dreaming of warm, summer days, I decided to fix a tasty chicken salad for my Saturday night recipe. We have a ton left over so I will be taking the leftovers to share at work. The salad is so yummy on a croissant roll or (my fav) Kings Hawaiian bread rolls. The recipe makes A LOT of chicken salad (serves 18 as a salad or 20-30 as a sandwich on croissants) and is perfect for a Ladies Luncheon, church dinner or a wedding/baby shower.

Sandra Lou's Chicken Salad:

8 cups of cooked chicken chopped (I used chicken tenders)
3 cups of seedless grapes cut into quarters (can be green or red)
2 cups of celery finely chopped
1 cup chopped pecans
1 1/2 cups of mayonnaise (I prefer to use Dukes)
1 1/2 teaspoon of salt
3/4  teaspoon of pepper
